Apple Of My (Rib)Eye

...I enjoyed a great, very tasty dinner of tender, juicy, crisped-on-the-edges steak with a hint of deep and intense, smoky coffee flavor, a bright and layered, sweet/sour/spicy steak sauce, and a light and airy fritter aromatic with the savory cornmeal yet finishing with the subtle sweetness flavor of apple.... Unexpected Gem

...The portion was more dinner sized, and, again, my skepticism was foiled by an ample amount of chicken meat, and scant traces of MSG or cornstarch. The dish, while delivering on its promise of spice, was refreshingly light, with the impressive rice noodles, rightfully gummier and spongier than regular noodles, making any residual cooking juices get absorbed into them while the flavored oils clung to them. Surf & Turf's Up

...I made a tuna tartare, mincing fresh raw tuna with soy sauce, salt, pepper, scallions, fish sauce, and ginger. I chilled the tartare while skillet-grilling an Angus tenderloin steak and making a hollandaise sauce incorporating wasabi paste and a little bit of mustard. After the steak was done and sat for a few minutes, I topped it with the chilled tartare, topped that with a sunny side up egg yolk, and spooned the wasabi hollandaise on top.... [Full post]



Down For Chinatown

... With the unfortunate exception of the shrimp paste (better in idea than in execution), this dish was quite a winner. The pork and beef were nicely seasoned and tender, and were enjoyed more with wrapped in the lettuce with a leaf each of basil and mint, some rice noodles, and a drizzle of house-made vinegar dipping sauce. The springs deftly crispy and not greasy on the outside and chock full minced veggies and meat on the inside.... [Full post]

...I won't ever give up omelets or pancakes or French toast forever, but considering not only the great tastes in these two dishes, but how much healthier (lower in carbs, cholesterol, sugars) they were as well, I think I could make a good case for eating like this more often during the a.m. hours.... Thai'd Up

...This is a favorite of mine, with so may tastes—spicy, sweet, savory, acid—and textures, the only disappoint was the name of the dish, which fraudulently suggests that I would get to enjoy more than one! Egg-a Omega

...I sautéed i few smelt fillets in some rendered bacon fat in a cast iron skillet, meanwhile frying to egg yolks sunny-side-up. I then placed the eggs on top of the chili pepper paste, then placed the smelt decoratively on top of them, trying to not visually obstruct the eggs.... [cont.]
