A Day in the Life of Hamburger Buns

....Two were of a kind of steak burger prep, with steak sauce, raw and fried onions, and bacon. The other two had the addition of sweet and spicy elements, making a pineapple mustard from scratch, pickling raw onions in balsamic vinegar, and two slices of crispy bacon, and kicking the whole burger up with sweet relish and hot jalapeños. Sea, Sea, Señorita

...The taste and aroma of saffron imparted wonderfully throughout the many elements of this dish while letting individual components speak for themselves. The mussels, by their very nature, a bit more earthy in taste than the clams, which countered by having a bigger, nicely briny belly. Both the shrimp and lobster meat cooked firm without becoming tough or stringy, and was a nice "spongy" conduit to all of the seasonings and residually cooked through oils.... [Full post]



First Friday Spring Morning

...Most often you'll find a sharp and/or spicy cheese accompanying roast beef; I find that it sometimes overwhelms the taste of everything else, most criminally, the beef. The brie was nice, smooth, and all "melty", with its milder flavor, which let the red peppers and scallions showcase its natural robustness, and allowing the roast beef to be the star of the sandwich with both its flavors and texture. The only seasoning throughout was salt and fresh-cracked pepper.... [cont.]


Quick Post | A Change of Plans

...I seasoned the steak with salt, pepper, chili powder, and just a pinch of nutmeg, and grilled in a cast iron skillet on very high heat, about 3 minutes each side for medium, took it out of the skillet, let it sit for another 5 minutes, then placed it on topped of the plated potato-parmesan cream and spooned the veggies on the plate next to it.... Egg-a Omega

...I sautéed i few smelt fillets in some rendered bacon fat in a cast iron skillet, meanwhile frying to egg yolks sunny-side-up. I then placed the eggs on top of the chili pepper paste, then placed the smelt decoratively on top of them, trying to not visually obstruct the eggs.... [cont.]
