So Fond Of The Saffron

...The result was outstanding, with the saffron, usually a nuanced flavor in most other dishes, partnering quite nicely with the tender, juicy, and flavorful meat. The pasta absorbed the residual juices and remained a toothsome base for the flavors to dance on, while the scallion's slightly pungent yet very aromatic herbaceousness kept the luscious beef and sauce for becoming overly rich.... Saffron-Stewed Beef over Linguini with Scallions

For Kristen

...I needed to head to the supermarket for some 85/15 ground beef, and make a plain and simple bacon cheeseburger, medium rare, with American cheese, bacon, a slice of raw onion, a leaf of Boston lettuce, and a quick and easy burger sauce (tomato paste, mustard, brown sugar, worcestershire sauce, cider vinegar, garlic powder, cayenne pepper, fresh cracked pepper, and salt).... Apple Of My (Rib)Eye

...I enjoyed a great, very tasty dinner of tender, juicy, crisped-on-the-edges steak with a hint of deep and intense, smoky coffee flavor, a bright and layered, sweet/sour/spicy steak sauce, and a light and airy fritter aromatic with the savory cornmeal yet finishing with the subtle sweetness flavor of apple.... A Day in the Life of Hamburger Buns

....Two were of a kind of steak burger prep, with steak sauce, raw and fried onions, and bacon. The other two had the addition of sweet and spicy elements, making a pineapple mustard from scratch, pickling raw onions in balsamic vinegar, and two slices of crispy bacon, and kicking the whole burger up with sweet relish and hot jalapeños. All four burgers sat very nicely on four toasted hamburger buns.... [Full post]

Surf 'n' Turf Starter

...Most "surf 'n' turf" dishes boast a flavorful earthiness, and this dish was no exception. The smokey brininess of the salmon complimented the mellow beefiness of the slightly seasoned, rare-ish steak. The very bright and peppery dressing accentuated both proteins' flavors, and rounded them out the sweet, almost citrusy herbal hints of the sage.... [Full post]

Sorry, Carlos

... Alas, the practicality, the chef argued, of Peel & Eat shrimp is that it presents less prep for the kitchen—no peeling by the sous chef—so he decided to scrap using shrimp, and instead use already "prep"-able—and "spice"-able on the fly—grilled chicken and/or steak, and has made an admittedly delightful and tasty version of what we will be calling Pub Tacos ... Quick Post | Rush Hour

... it was a whole new new surreality to watch pre-cooked egg "rounds"—available in "white" or "yellow", as my sandwich artist called them (?!)—being layered into the bread as I ordered a Black Forest ham, egg and cheese on a (pre-toasted but likewise not baked on premise) English muffin, and—to make good use of the toppings station that is made fully available for breakfast!... Blue Mountain Burger

...So, for the upcoming menu, I decided to try a version of a blue cheese burger, which I will be calling the Blue Mountain Burger, which will be grilled to order and topped with melted blue cheese, steak sauce, hickory-smoked bacon, and fried onions.... [Full post]

Quick Post | A Change of Plans

...I seasoned the steak with salt, pepper, chili powder, and just a pinch of nutmeg, and grilled in a cast iron skillet on very high heat, about 3 minutes each side for medium, took it out of the skillet, let it sit for another 5 minutes, then placed it on topped of the plated potato-parmesan cream and spooned the veggies on the plate next to it.... Monday Night Steak Special

...Last night, I decided to spoil myself with our Monday Night Steak Special (served every Monday night after 5 p.m.) which is a 14 oz. N.Y. Strip Steak, marinated for 6 hours in Chef Gary's signature garlicky smokey-sweet sauce, grilled to order, topped with fried onions, and served complete with a side house or Caesar salad, potatoes, and veggies—all for just $18!... Best of Both Worlds, Twice

...The great thing about chili is that you always have to make them in large batches, as I did. And, now I still have a whole bunch left over. Something to look forward to now, the following morning—this Christmas morning!—as I remember how chili improves over a couple of days in its chilled container.... [cont.]

Yo Quiero Cascabel!

...A silver tray carrying my gorditas were soon carried out to my table and immediately impressed me with their very appetizing presentation. The corn "buns" warm toasty warm and aromatic. The pork belly was especially nice since they retained the ration of lean pork to fatty pork that I like. I prefer a little more lean since, as opposed to other proteins, lean pork has plenty of flavor itself.... [cont.]

Flavor for a Favor

...My very good friend, Lauren, had been asking to be my dinner date for quite some time, and she would now have the opportunity as she had earlier in the week offered to buy me a steak dinner as a return favor for a previous charity I had given her. I believe that charity was in the form of several glasses of red wine (over a number of evenings).... [Full post]
