White On Rice

...I started the risotto in a large, deep skillet by sautéing the white mushrooms, thinly sliced, in some olive oil salt and fresh cracked pepper. Then a cup of white rice was stirred in, making sure to coat them in the oil. Then—yes, a slow and steady process—I continued to stir the rice, spooning in some chopped garlic, then adding chicken stock, a little wine, and some water, for 15–20 minutes, finishing it with finely chopped cauliflower (earlier steamed), a little heavy cream, some shaved parmesan cheese, salt and fresh cracked pepper.... Doing Right By Leftovers

...Over medium heat, I stirred until the garlic just started to brown (I don't mind the leeks browning a tad), then cubed five Idaho potatoes and thrown in as well, tossing them in the oil. Many folks like to add the liquids to the pot before the potatoes; I work on the theory that the potatoes will have more flavor if they absorb the oil first, and then later the liquid.... [cont.]

I'VE BEEN ASKED HOW I come up with some of my recipe ideas. At any given time I have a whole bunch of ideas "marinating", shall we say, in my head. Usually, the source of their inspiration could be a random food item I happen across in the supermarket, a leftover ingredient in my fridge that I need to use before it goes, or an innocuous request of sorts from one of you!...
