A Day in the Life of Hamburger Buns

....Two were of a kind of steak burger prep, with steak sauce, raw and fried onions, and bacon. The other two had the addition of sweet and spicy elements, making a pineapple mustard from scratch, pickling raw onions in balsamic vinegar, and two slices of crispy bacon, and kicking the whole burger up with sweet relish and hot jalapeños. Do You Know Wot?

...All of it contained great flavors, even with some spice combinations being a little foreign to me. the meat dishes each had tender proteins, spiced for flavor and heat, and complemented well by the bread. No...PHUDE...'Til...Brooklyn!

...The chicken had "cracklin'" good skin and was minimally seasoned, letting the the flavor of the chicken shine through, its meat tender and juicy. A nice flaky exterior, an aromatic, airy interior, the biscuit tasted great in its own bitefuls or coupled with a pull of the fried chicken. The mac 'n' cheese, drizzled with hot sauce, was creamy smooth, cheesy without that extra "sharpness", and its pasta maintaining an almost perfect al dente firmness.... [Full post]



The Proof Is In The Eating

So dredging some breast and drumsticks in a flour and cormeal mix spiced with salt, pepper, garlic powder, chili powder and paprika, and herberd with dried oregano, basil, sage and tarragon, I deep fried those in some hot corn oil two-to-three pieces at at time for about 10-12 minutes per batch, and they came out all golden, crispy-skinned on the outside... Ging-ing It

...The shrimp were big and tasty, fried in a tempura-like batter that was not at all oily. The dumplings were light, with a nice non-gummy dough and a fully seasoned pork filling that require less soy dipping sauce than most dumplings do. The eggrolls were prepared more modernly, with a lighter yet crispier wrapper, and were nicely complimented by spicier- and fruitier-than-usual duck sauce.... [cont.]

...The great thing about chili is that you always have to make them in large batches, as I did. And, now I still have a whole bunch left over. Peruvian Gold


...Yet, unlike the neighborhood's standing Peruvian cuisine champ, Pio Pio, Chicken Festival, in it's being so new, has something to prove. I've been going to Pio Pio for years; however, over those years, I've seen the service get more caustic, the restaurant get more cramped and rushed, and the delivery take longer and longer with varying results in portion size, food temperature, and even accuracy of order.... Fatty Crab Is No Joke!

...Trixie and I were happy and full, as I asked for a doggy bag for the remaining mussels and duck (The Fatty Dog had been completely obliterated!). We were finally done.... HA! Or so we thought. The manager, Dave (I believe his name was), brought us out some panna cotta with coconut and nuts. Are you kidding me! And, it was on the house. I guess all my talking did us some good!, I was thinking of gloating to Trixie. That was until I just happende to catch, and watch, old school New York City comedy god (and tenured member of LAW & ORDER: SVU, Richard Belzer walk right by our table..... [Full post]
