Jamaican Me Happy

...The tender chicken was nicely seasoned and slow-cooked patiently to make for some very tender chicken, replete with the flavors of its island seasoning, even rendering the small percent of the chicken's fattier parts into wonderfully chewable morsels. The rice was nicely aromatic and the sole but oversized, thick slice of plantain was comfortably "toothsome", nicely caramelized without being overly sweet.... [Full post]



L'Afrique? C'est Chic!


...A plentiful and aromatic dish, this was another tasty winner. You could really taste the melange of flavor influences, a hint of mustard in the marinade, some sweeter spices—nutmeg maybe—mixing with spicier ones, and the barely-on-the-bone lamb, with its deeper but not gamier flavor, possessing the quality of imparting its leaner meat's flavor, as well as its fatty flavors (most meats really heavily on its fat content alone for flavor).... Ooze and "Ahh"s....

...yet having the cheese be that much hotter in temperature—almost liquid in consistency—was an absolute bonus. The sausage patty had plenty of spices in the meat that wound up in the juices of the beef's rendered fat, and possessing a nice caramelized exterior. The homey flavor of the egg still managed to break through as well, and all of it went down handily with a glass of iced orange juice with coconut water cocktail.... [Full post]



Crustacean Determination

...The crispy noodle, to me, were the coup of this dish, bigger toasted crumbs on the outside provide loud crunch from the beginning to the end of each bite. The sriracha sauce was also a great success, with that chili-garlic heat that starts with a sweeping hit a heat, mellows out by the back off the mouth, and finishes like a flower through the nose. The herbs cool and crisp, cleansing the end of each forkful. And the crab cakes, fortunately, delicated seasoned enough to still taste all the crab goodness, although I couldn't help thinking how much better these could have been with lump crab meat, those delicious firm, flavorful lumps being a cap highlight, and star, of the dish....
