Barbados, much like the rest of the Caribbean, is known for a more laid back, peacefully slower paced culture. So it is to my pleasant surprise to find that newly developed Savvy On The Bay has had an almost 3-time proliferation of food vendors since my last visit this past December.

One of the new dining spots is Teppanyaki on the Bay, offering teppanyaki service — grilling and frying foods on a flat-top grilled directly in front of diners — and boasts being the first and only restaurant offering that service publicly (outside of a hotel).

I decided to dine there for sunset, and was treated to a wonderful meal of a very fresh and crisp starter salad with *wafu* sesame dressing and a "combo” entrée of grilled chicken, shrimp, and veggies, served with their signature ginger and sesame sauces.

The grill master and business partner of Teppanyaki, Darian (or Dorian, I don’t remember which), explained that the bright, “poppy” properties of the pepper flavors I was enjoying was due to a special mix of applications of a variety of peppercorns,and that great creative care and skill explains the great tastes I experienced through the whole course.

The freshly grilled teriyaki chicken and shrimp (the shrimp properly being the last to hit the heat) were skillfully dressed, but not drowned, in a lovely, layered soy-based sauce, and even the veggies were so tasty that I not just ate but *enjoyed* the the zucchini, which I’ve otherwise have always had a great aversion too.

 

And savoring this (quite fairly priced) meal while watching the sun set over this section of Carlisle Bay, with the rest of Savvy on the Bay abuzz with activity, was a great, deliciously laid back way to close out and celebrate a productively busy day and week.
