The Animal Kingdom of Cakes

When I got here to Barbados during the height of the pandemic restaurants were closed but, oh, how that gave me the fortunate opportunity to revel in the cooking of many talented and skilled chefs, cooks, and bakers.

When restaurants eventually opened up again, I of course spent a lot more of my time exploring the many, and surprisingly (to me) varied, dining options — many of great quality.

But this week some social media posts reminded me there were still home cooks who were still delivery some delicious food. So earlier this week I ordered two slices of two different cakes, a Chocolate Turtle Cake (chocolate cake, salted caramel) and a Hummingbird Cake (banana bread cake, pineapple, pecans) from iBake246.

 

Both piqued my interest for their uniqueness. To date, I’ve only had the chocolate turtle cake, but it was indeed lovely, with moist chocolate cake, a rich, creamy, firmer filling and frosting, ample drizzles of salted caramel, and added shaved chocolate for good measure. Quite a multitudes of wonderful flavors with each forkful — and none of it cloying or feeling unnecessarily excessive.

This bodes very well for the Hummingbird Cake — a cake I’ve never had before — and for the other flavors of cake I look forward to ordering from iBake246 in the near future.
