Oven-Baked Tortilla Pizza| White Cheese Pie with Mushrooms and Scallops
I HAD A SOFT FLOUR tortilla left over from this morning's pizzas. I had one last aluminum pizza pan left as well. So, for dinner, I prepped the tortillas the same as I did earlier today, then spread then "dry" side with a mixture of ricotta and parmesan cheeses, ground white pepper, garlic powder, olive oil, and salt.
I topped the cheese spread with slices of fresh mozzarella, then thinly sliced white mushrooms, and more thinly sliced scallops. I finished it with drizzles of olive oil and the juice of half a lemon, then popped that into a preheated oven set to broil.
The very tasty and unique tasting pie was done in about 5 minutes, although this time, didn't have anyone around to share it with, so, all mine...!
