SCALLOP HASH with TRUFFLED EGG | Bay Scallop Hash with Prosciutto, New Potato, Topped with Sunny Side Up White Truffle-Infused Egg


I HAVE THE GREAT GOOD fortune to have a restaurant regular customer who lives in the building next to mine—who is a long-time salesperson for what has been a number of high end food products. I met him when he used to sell caviar for Petrossian, and he has seemingly been so impressed with my love of all types of food (and is such an awesome friend), that he gas over the years allowed me to sample a variety of caviars, smoked salmon, and foie gras and goose liver patés.

I couple of weeks ago, he brought into the restaurant some eggs that he had sit in the container in the bottom of his fridge along with 40 pounds of white truffles, now in season. As the eggshells themselves are actually porous, after a week, the eggs are infused with the flavor and aroma of these precious and delectable white truffles.

Our new chef found an immediate use for them, soft-frying them and putting them on top of a Wagyu beef burger, serving on a toasted brioche bun with just the addition of fresh arugula.

My friend just left me yesterday with a full dozen of these white truffle-infused eggs. The first dish I thought to make this morning was a breakfast hash of bay scallops, new potatoes, prosciutto, and shallots, and topping it with one of these eggs sunny side up. It came out very delicious, with the warm, silky, runny yolk imparting the taste and bouquet of the truffle through the dish as I mixed the hash with it along with fresh arugula and toasted italian bread. It was a winner of a dish indeed.

Now, eleven truffle eggs to go, and already some great suggestions of what them from my Facebook friends (quiche, grilled cheese, carbonara, goat cheese cheesecake), and can't wait to execute a few of those along with whatever my own crazy brain can come up with.
