Fried Chicken Burger Sliders | Chicken-Fried Ground Chicken Patty topped with Chilled Red Potato Salad and BBQ Mayo on Flaky Country-Style Biscuit

Only because you'll ask, will I quickly tell you how I made these, in obvious honor of the Independence Day holiday and the tradition culinary fare offered all over the country to mark the occasion.

The chicken (white meat, dark meat, and skin) was store-ground, I mixed salt, pepper, and a bit of applesauce (my go-to ground meat moistener) into the ground chicken and formed small patties, dredging just the tops and bottoms of each patty with all-purpose flour, then egg wash, then a second flour seasoned with salt, lots of black pepper, onions powder, garlic powder, chili powder, ground sage, and thyme. I then set them to fry in a cast iron skillet with hot corn oil and rendered bacon fat.

I medium diced red potatoes and boiled in salted water and rosemary until just cooked through. I then drained them, shocked them in cold water, drained them again, then tossed them in a bowl with a little yellow mustard, mayo, brown sugar, lemon juice, chopped scallions, a drop of cider vinegar, and a bit of relish. The potato salad was then covered and set in the fridge to chill.

Some more mayo got mixed separately with mustard, ketchup, mayo, worcestershire sauce, cider vinegar, hot sauce, and a dash of liquid smoke.

Once the fried ground chicken patties were cooked to a golden crispy exterior and set on paper towels to drain, they were set on sliced fresh-baked store-bought flaky biscuit bottoms dressed with the BBQ mayo. The then chilled potato potato salad was spooned onto of each patty, which was then topped by the biscuit tops, dressed with more BBQ mayo and some spinach leaves.

Fireworks for the tastebuds, these burgers were a personal success in idea and execution, as were a huge hit with my co-workers at the restaurant below my apartment! I wish you all as exciting, fun and happy July 4th holidays yourselves!
