An Irish Brogue-er, Pt. 1

I was actually quite surprised at how few images showed up when I typed  Irish burger into Google. That only made me even more excited to execute an idea that came to me in a dream—an Irish-themed burger!—just in time for St. Patrick's Day this Sunday.

I knew it would involve Irish cheddar—a moderately sharp yet sweeter cheddar—and, of course, some Irish bacon (known as back bacon here in the States). Went through a whole host of other additions such as black pudding, and even the impossibility of a soda bread bun, before deciding on adding some mashed potatoes with scallions and grilled seasoned tomato slices.

I reduced some Guinness stout ale with beef broth and minced onion, and after grilling a ground beef patty also steamed with some Irish whiskey and topping it with the Irish cheddar to melt and grilled Irish bacon, I was able to finally put together a beautiful a delicious stack of a burger I decided to name the "Erin Go" Burger.

I now hope as others Google "Irish burger" in the year's to come, they will be inspired by my creation. And I hope I have the same "luck of the Irish" as I make a "St. Paddy Melt" tomorrow. Sláinte!
