Haute Dogs | with Shrimp, Wasabi Mayo, Pickled Orange Peppers
MY FRIEND AND CO-WORKER, Ali, was looking at the images of the "haute" dogs I had made for the post Dog Days of Summer, and although she complimented me on how appetizing the hot dogs looked in the pictures, she was curious, as a few others have been, if they actually tasted as good as they looked.

Having a rare but conveniently, and necessarily brief, few, free minutes, I decided I would quickly recreate the dish for her and my fellow bartender, Chris.

So I again skillet-grilled two Thumann's Pork & Beef Hot Dogs and placed them into toasted hot dog buns, topping them with shrimp (this time boiled in water, butter and lemon juice instead of sautéing them in butter and garlic), wasabi mayo, sriracha sauce, pickled orange peppers, and cilantro, and bringing them downstairs on a paper plate to Ali and Chris to try.
